Wikipizza is the pizzeria of Vittorio and Paola. Vittorio makes the dough and bakes; Paola welcomes guests in the dining room. We've been open in Dorgali since 2009: 17 years on Via La Marmora 87, on the road that leads to Cala Gonone, opposite the elementary school.

The story
Vittorio has been a pizzaiolo for more than 30 years. The Wikipizza dough was born from that craft: years of testing flours, hydration, fermentation times, until we found the formula we still use every day.
In 2009 Vittorio and Paola opened Wikipizza in Dorgali with a simple idea: use Sardinian products we know, choose the people who make them, and put them on a pizza that holds up to their flavour.
Since then the place has grown together with the village locals, with the tourists heading to Cala Gonone, and with our own online ordering system that today serves both delivery and takeaway directly from our website.
What "The True Pizza of Sardinia" means
Our dough is made with sourdough starter, ferments for over 48 hours, and contains Sardinian milk and a very small amount of extra-virgin olive oil. Vittorio bakes every pizza on stone, in the wood-fired oven.
On top we use only Sardinian short-supply-chain products, chosen one by one:
- Myrtle-cured lardo from Larderia Palitta in Dorgali — Sardinia's first lardo curing house — aged 7 months in Sardinian-marble basins.
- Cheeses from the Caseificio Dorgali Pastori, in business since 1972, including Froriu, a Sardinian blue goat's-milk cheese.
- Fior di Latte mozzarella from Arborea, 100% Sardinian milk, no preservatives.
- Certified Nieddittas Sardinian mussels from the Gulf of Oristano, in summer season.
